These biscuits worked out really well for Easter and as I had some Easter cutters Meg got her Easter "egg". I used gluten free flour but if you are ok on normal white flour then use that. We are also cutting back on sugar again I used glucose powder which just make a slightly less sweet drier taste so I used Evaporated milk and and extra tablespoon to make it slightly moister. 50g / 2oz sugar 3 tablespoons milk 225g/ 8oz self-raising flour a pinch of salt 75g / 3oz margarine 50g / 2oz cooking fat- I combined these as 5oz margarine. 1. Put sugar and milk in a small pan over a low heat and stir until dissolved. Allow to cool 2. Sift flour and salt into a bowl, rub in fats and bind to a dough with the cooled liquid. 3. Using a floured board roll out dough to 7 mm / 14"thick. Cut into biscuits with whatever shape cutters you have and place on greased baking tray. Or roll into small balls and and flatten with finger tips. Prick each biscuit with a fork (I forgot to do this and they were ok) 4. Bake near top of moderate hot oven. Gas 5, 375F, 190C for 15 mins till pale golden brown. 5. Cool on a wire rack and the enjoy. As a treat I dipped them in melted chocolate but they are fine plain too. Attachments:
