I'm having some success with this recipe, still needs a little tweaking but is very tasty and so easy to make once you can be bothered to get everything out. You need quite a deep tin for it I have found as to get a decent texture when cooked it needs to be quite moist as a mix and if the tin is too shallow it flows over the edge and down the sides of the tin.
The Doves Farm bread flour comes ready proportioned for this and works really well if you can get it.
Oven For Crusty 220C / Fan 200C/ 425F/ Gas 7.
This does come out quite baked, I prefer 190C and a little bit longer for a softer crust.
450g/ 16oz GF White bread flour
1/2 tsp salt
2 tsp dried yeast
2 tbsp sugar
325ml / 11fl oz warm milk
2 eggs
2oz butter
1. Mix together flour, salt, yeast, butter and sugar.
2. In a large bowl beat the egg and milk together.
3. Add the flour mix to make a sticky dough. I did this in a food mixer as it is very sticky and mixed it for several minutes till it became slightly elastic.
4. Place the dough into a greased 1kg/2lb bread tin, cover and leave to rise for 1 hour.
5. Bake in a preheated oven for 40 to 45 minutes.
I have tried making it in a breadmaker but the result was an pale grey coloured rock!!!!!
It is so much easier to make by hand as long as you have time to hang about while it rises as you don't have to knead it and work it like normal bread.
Alot of recipes use oil instead of butter but I added butter instead and prefer the result. otherwise use 6 tbsp oil which seems an awful lot!!!!
