Salmon Fish Cakes. – Serves 2. Wheat free, dairy free and starch free. These are easy to make, light and delicious. Make good toddler food too as can be eaten with fingers. They can be made with other fish and other seasonings to suit. Ingredients: Makes 8 small muffin size. 2 salmon fillets 2 teaspoons olive oil (or equivalent) 1 egg beaten Pinch of parsley Salt and pepper to season 1. Preheat oven to 180C, 350F, Gas 4. 2. Lightly fry the salmon steaks, or wrap in foil and cook lightly in the oven for 20 minutes. 3. Place the egg, oil, parsley, seasoning and salmon in a food blender and mix until well combined. 4. Spoon the mixture into greased mini muffin tins and bake for 10 to 15 minutes until cooked through and golden brown. The silicone muffin tins work well as they are less likely to stick.
