Gluten free flatbread

Tried these today and they were great.
I use Doves Farm gluten free wheat mixes and they are really good.
For this recipe to make it lighter I used the self-raising blend, but if you need to use a mix then maybe use rice flour and baking soda.
Invest in a good food mixer to save alot of sticky hands and elbow grease as gluten free flour doesn't go as elastic as wheat flour.
Into the mixer (using a dough hook if you have one):
8oz / 2 cups / 210g self raising gluten free flour
1 tsp mixed herbs (optional)
1 tsp salt
150 ml water
1 tbsp olive oil.
Mix the ingredients together in the food mixer and knead for a few minutes, or by hand on a floured board (but be prepared to get sticky). Form into a ball and leave covered to rest for 15 minutes.
Heat some fat (meat dripping will give a lovely flavour to it)in a frying pan so quite hot. Break off a small ball of dough and flatten on a floured board until thin, then place in frying pan for about 1 minute till starts to lift away, then flip over and fry the other side. Take out of pan and place on kitchen towel if you don't want too greasy to mop off some of the oil. But to be honest it is quite nice hot and greasy..... If you are doing a batch then keep in a plate in a warm oven while you do the rest of the batch.
If you only need to make a few at a time then put the rest of the dough in clingfilm in the fridge for the next day.
These make great strips for children finger food, or for dips etc. You could experiment with curry powder, chilli, ginger, whatever herbs or spices are safe for you.
