I only recently rediscovered these, I used to make them alot as a student as they were quick and easy and very filling and can be made almost any flavour. And meg loves them which is great.
4oz / 125g/ 1 cup self - raising flour or plain flour + 1 tsp baking powder pinch salt, pepper, herbs for seasoning 1 large egg 150 ml / 1/4 pint milk
Mix flour and seasoning in a bowl. Make a well in the centre and drop in the egg. Gradually stir in half the milk and using a wooden spoon (or a food whisker) and beat until smooth, adding the rest of the milk.
Fillings can really be anything you fancy that is safe for you.
Bacon: fry then finely slice and add
Cheese: grated cheese
Tuna and parsley: flake a small tin of tuna and mix with 2 tbsp parsley
Cold cooked chicken and mushroom: fry the mushrooms finely chopped and mix with finely chopped chicken.
Spinach is another option if you can tolerate it, just cook it and shred it finely.
To make the fritters add your filling to the mix if you are using them, heat some fat in a frying / griddle pan, add tablespoons of the mixture and fry until golden brown on both sides flipping half way through, they only take a few minutes on a medium heat.

How can you have flour. It's high in fructans.

Hi some can tolerate flour, others can't. I usually mention gluten free but didn't on this occasion. In England we have doves flour which comes in plain or self raising batches and this recipe works well with these if you whisk the mix well before using as it tends to settle quickly.
