This is a Madher Jaffrey recipe. Its a firm favorite in our family and I remove my daughter's portion halfway through so hers is FM-friendly. Non-FM-friendly parts are highlighted by **.
Sprinkle 8 chicken thighs with salt and pepper
**Simmer 12 chopped dried apricots in 250ml of water in a small pan for 15 mins.**
In a separate pan heat 3T oil, once hot add 1 tsp whole cumin seeds and 2 cinnamon sticks. Ten seconds later add chicken to pan and brown on all sides.
Add 2 medium onions (cut in large pieces so that they can be avoided for FM-ers) and continue to fry until onions are brown. Add 3 tsp grated fresh ginger and fry for a few seconds. Add 350ml water and 1 tsp salt and cook gently for 15 mins, turning the chicken once during this time.
Add 1 tsp garam masala and 1/2 tsp cayenne pepper. Cook for around 5 mins.
REMOVE FM-FRIENDLY PORTION
**Add the apricots in their liquid, 1 tbsp tomato puree, 1 tbsp sugar, and 2 tbsp red wine vinegar. Simmer uncovered until syrupy.**
Serve on rice.
