Meg reached the grand age of 9 years old yesterday so I rustled up a banana loaf for her as a birthday cake and it worked really well. It was a great shape for putting toy horses on top for decoration and she wasn't fussed that it wasn't iced, it's just us silly mums that think birthday cake MUST have icing!!!!
2 ripe bananas 2oz /50g butter 5oz / 150g sugar 2 eggs 8oz / 225g self-raising GF flour.
Mash banana Cream butter and sugar Beat in eggs Add flour and bananas and mix well. Put into a greased loaf tin (about 1 1/2lb tin) Bake for about 1 hour on Gas 5, 375F, 190C until loaf is golden brown, springy to touch and shrinking slightly from the sides of tin. Turn out onto wire rack to cool.
This can also be used as a pudding.
