I have the Low Fodmap Diet booklet from Australia and it has potato on their shopping list for items low in FODMAPS. The Nutritional Guide for Fructose ( www.healthhype.com/nutrition-guide-for-fructose-malabsorption.html) puts it on their "To Try in Moderation" catagory. I've given Kaelin potato chips, trying to be careful about the oil it is processed in and any other additives or preservatives. Yet she still mentions stomach pains and she gets really hyper. She seems mostly okay with a baked potato, but there are still some signs of getting hyper. I assumed it was because she likes cheese and sour cream (other clues that maybe lactose is a problem.) But then again, maybe it's just the potato... It's a hard theory to test because she simply won't eat a plain potato.

Meg gets very hyper after chips, she is slightly better if they are fried in lard rather than veg oil. Meg likes mashed potato, try using shaped cutters (like you make cookies with) to make the potato more fun, that works with kids in general. Use old white variety of potatoes are best that are peeled as most sugar stored between skin and flesh. New potatoes are high in fructose.
You could also make potato cakes and fry them in breadcrumbs, I'll dig out a recipe and post it.
